The realization that, along with the usual green apple, many vitamins, minerals, amino acids (and germs, by the way, also) enter our body came to humanity after centuries of ignorance. Today, science is one of the most invested industries in the world. We learned how to synthesize biologically active components, manage our own eating habits and squeeze the most out of food.
One of the most important components that we can get from food (or synthetically) is quinic acid. It is found in abundance in berries, fruits, their derivatives. How useful is quinic acid and what happens to the body when it is deficient?

Quinic acid (C7H12O6) is a monobasic polyhydroxyascorbic acid. This is a crystalline substance that is found in abundance in quinine bark, plants, coffee beans, berries and fruits. There is another way to extract the quinine component (in addition to biological synthesis) – hydrolysis of chlorogenic acid. The component is used in traditional / traditional medicine and homeopathy.
A Brief Historical Reference
The substance was isolated by the German organic chemist Hoffmann in 1790. The scientist isolated quinic acid from the bark of a quinine tree (a genus of plants from the madder family). Later studies were conducted that confirmed the presence of organic acid in plants.
In young shoots of plants contains about 14% quinic acid (based on the mass of the obtained dry raw materials).
Organic compounds are found in such products: tobacco, apples, blueberries, cranberries, plums, grapes, quinces, unprocessed coffee beans. According to scientists Kochman and Sanbur (authors of “Isolation of Quinic Acid from Fruits”) – quinic acid is most easily extracted from fruit and berry fruits. The statement is based on the ability of both organic and synthetic components to dissolve under the influence of calcium and lead compounds.
Useful properties of the substance
After research confirming the beneficial effects of quinic acid on humans, among adherents of healthy eating, a real stir began, which eventually subsided and then simply came down to zero. What really happened?
Indeed, the component is able to normalize the temperature of the human body (movement to the norm occurs both from excessively low and high indicators), which is so important for infectious or bacteriological diseases. Instead of stuffing yourself with pills, you can try to eat quince, peach, pear, grapes or drink real black coffee. If you provide the body with the desired concentration of the substance, then the temperature really stabilizes.
This effect is observed with a one-time symptoms, which is not associated with serious diseases, but is provoked, for example, by the weather, problems at work or the first stage of a cold.
It is useful to introduce products with quinic acid during the recovery period after illness (regardless of severity, nature, age, and other factors). The substance will help the body to start the process of early regeneration, restore the balance of microflora and become a kind of “support” for exhausted internal organs.
What else is useful quinna substance:
- speeds up metabolism;
- increases salivation;
- improves gastric acid secretion;
- copes with disorders of the stomach / intestines and other unpleasant pathologies of the abdominal cavity;
- relieves headache / migraine;
- restores and promotes the normal functioning of the nervous system;
- helps to remove the symptoms and root cause of gout / fever;
- normalizes cholesterol level (excess removes from the body, reduces the level of harmful fats in the blood);
- enhances the effect of drugs for radiation sickness and malaria.
All organic acids (including quinic) have a beneficial effect on the level of digestibility. The body will become better and faster to absorb nutrients, which has a beneficial effect on skin condition, energy metabolism and general health.
Interaction with other chemical components
Interacts with caffeic acid, as a result of which chlorogenic acid is formed. The substance has a pronounced antioxidant effect, oxidizes arachidonic acid, reduces the level of harmful components in the blood plasma and reduces the risk of heart / vascular disease. Also, chlorogenic acid acts as a kind of protector against human papillomavirus, Escherichia coli and Staphylococcus aureus.
When interacting with alkaline food, it changes its structure and turns into salts of quinic acid (in this process, the formation of calcium salt is especially important and useful). After contact with oxygen, the substance decomposes into 3 components: acetic and formic acid, quinone.
Contraindications, shortages and side effects
The lack of quinic acid in the body leads to perceptible weakness, decreased performance and the formation of symptoms similar to severe food poisoning. Also, an excess of substance is fraught with a violation of coordination, dizziness, frequent uncontrolled fainting. The exact opposite effect of excessive concentration of quinic acid is overexcitation. A person does not feel the need for food, liquids and sleep. A sharp decrease in brain activity is noticeable. After the phase of active wakefulness, a prolonged breakdown occurs and a decrease in all indicators that previously went off scale.
People with poor health (genetic pathologies, the period of treatment of serious diseases, a temporary decrease in immunity) may suffer from quinic acid. The substance can cause hearing loss, functional disorders of the organs of vision. In the worst case, the use of acid will lead to cardiac arrest.
The content of quinic acid in the body is influenced by 2 main factors:
- food intake (a balanced diet minimizes the risk of deficiency or excess of various substances);
- fatty subcutaneous layer (helps reduce the level of acid).
Cinnamic acid and body beauty
A normal concentration of a substance helps to normalize blood glucose levels. If glucose becomes less, then the body begins to use subcutaneous fat to ensure energy metabolism. The result is a reduction in body fat (even at the most problematic points) and a gradual reduction in weight.
Weight and body fat will decrease methodically. Burning certain fat at a certain point in the body is impossible. Volumes will go in the same amount and at a uniform pace.
Quality of life and human health is directly dependent on weight. Excess body fat indicates health problems. Cinnamic acid will partially help to cope with this problem, but real results can be obtained only through a balanced diet and physical exertion.
Consumption of quinic acid from organic products (fruits and berries) practically can not harm the body. You must comply with the dosage and individual contraindications, so as not to get an adverse effect. Synthetic acid, which is produced on an industrial scale, must be consumed with caution. Before taking, go through the diagnostics and consult a doctor in order not to harm both your own beauty and health.
Interaction with the human body
The daily norm of the substance is 250 milligrams. This indicator is designed for a healthy person with an optimal percentage of muscle tissue and fat. If the body mass index differs from normal (in either direction), then the amount of substance consumed must be regulated. 500 milligrams of quinic acid will be enough for people who are overweight, 150 for people with a minimum percentage of fat.
For any deviations from the norm, it is necessary to consult a doctor. Find out the reason for the abnormal weight, eliminate it and discuss with your doctor the necessity of consuming some organic components and a complete / partial rejection of others.
To cover the daily rate of the organic component, eating 1-2 handfuls of seasonal berries and a few fresh fruits is enough. The body especially needs quinic acid when:
- disorders of psycho-emotional state, depression, nervous breakdown;
- elevated body temperature (if tests and inspection do not find another root cause of abnormal temperature);
- a specific list of diseases of the gastrointestinal tract, regardless of the stage and cause of development (regulated by the attending doctor).
Contraindications to the use of the component
There are all 2 contraindications: an allergic reaction to the substance and the presence of diseases of the abdominal cavity.
Why is it that with some pathologies of the gastrointestinal tract quinic acid is desirable, and with others forbidden? It depends on the nature of the disease, its stage and the general condition of the patient. The body of each person is unique, therefore, forms individual preferences and requests (including for chemical compounds). After examination, diagnosis, therapeutic manipulations, the treating doctor receives a complete picture of the needs of the organism of a particular patient. In case of serious pathologies of the gastrointestinal tract at the acute stage, the majority of products containing quinic acid are excluded from the diet. They can aggravate the course of the disease and lead to disastrous consequences.
Methods of industrial extraction component
Modern science has 2 options: biological and synthetic.
The bark is removed from the cinchona tree, then it is soaked for several days in a container with cold filtered water. It is important that there are no harmful components or additional impurities in the liquid, as this may affect the final result. After soaking, milk of lime is added to the container. The resulting liquid was filtered, then evaporated. After simple manipulations, the liquid turns into a kind of syrup with a liquid consistency. A crystallized quinine-calcium salt is naturally released from this syrup. The crystals are exposed to oxalic acid, after which they change the state of aggregation to liquid. Quinic acid is evaporated from the obtained liquid, placed in a special container and allowed to solidify. After cooling, the substance again returns to the state of pure crystals (without additional “unnecessary” compounds).
Milk of lime (calcium hydroxide) is a chemical substance in the form of a white powder. The element performs a connecting function and acts as the basis for the preparation of concrete, Bordeaux fluid (solution of copper sulfate), food additives, soil fertilizers, whitewashing rooms, means for disinfecting the oral cavity. Also, milk of lime can reduce the level of water hardness.
Synthetic way easier and faster. Organic acid is released during the hydrolysis of chlorogenic acid.
Hydrolysis is the process of decomposition of a complex substance under the influence of liquids.
During hydrolysis we obtain synthetic quinic acid, the characteristics of which are identical to organic. The substance is soluble in liquids. Under the influence of cold water, the substance dissolves instantly, but dissolving in alcohol, ether or hot liquid will take an indefinite amount of time. The melting point of the acid is 160 ° C; when heated to 220 ° C, the component turns into quinine.
Quinine is a white powder obtained from the bark of a quinine tree. Used as a medication. It has a pronounced bitter taste and a specific smell.
